Select the UVs around the ear and apply Unfold.
耳のUV をセレクトし、Unfold を適用します。

Select the faces like this and check the shape on UV map.
このように面をセレクトし、UV マップで位置を確認します。

Move UVs and match to the image.UV を移動し、耳の画像に合わせます。

Symmetrize.
左右対称にします。

Readjust the other side.
反対側のUVを調整し、画像に合わせます。
